What I Eat in a Day

Breakfast:

-1/2 cup of egg whites cooked in coconut oil

-topped with: sunflower butter, a tbsp of vegan butter (I love this brand), ceylon cinnamon, and chia seeds!

I know egg whites & any kind of nut & seed butter aren’t the typical pairing, but trust me; don’t knock it til you try it. Right now I’m all about the sweet > savory eggs.

Lunch:

-Spinach salad mixed with: shredded chicken breast, 1/2 avocado, 1 tbsp hummus, 1/2 of a lemon juice, & balsamic vinegar.

-Side of Yukon gold potato sautéed in avocado oil, pink salt, & (not pictured) drizzled with a shit ton of mustard!

Dinner:

-I picked up Pho from a place called Vina Pho and Grill in Boulder! This was: rice noodles, chicken, cilantro, and some type of hot sauce. *I usually cook dinner at home and will do lots of veggies and a protein, however it was absolutely freeeezzing in Boulder yesterday, ya girl was craving a warming bowl of Pho.

NOT PICTURED:

-16 oz. hot almond milk matcha latte

-Vanilla chai caffeine free tea from pukka

-2 pickles while I was waiting for my Pho, because I’m a freak and love fermented shiz.
